I was sad that your mum noticed that you were more vulnerable than some of the people on the ABC ... I wondered when I notced the avatar changes.  Maybe its good that you can signal your true self in some way. ... or for a little time ...

Yes I often try and protect others from how I am feeling.  Sometimes it is unsuccessful ...

Hey thanks for the invite to the Friday Feast catch up, @CherryBomb - appreciate the inclusion in a regular, community time. Although now it is Saturday! I love creating new food on Fridays so Friday Feast is agreat place for me. I always try something I haven't made before.

Last night I made a brill shepherd's pie, for the first time. I eat only plant-based food to help animals, so I am always looking for new and creative yummo things that put peace on my plate. Hope it is okay to share my recipe here in case others are interested too. ❤️

My Shepherd's Pie, or maybe that should be a Gardener's Pie Smiley Very Happy

1 packet of Tofurky Ground beef style. (a 100% vegetable product*)
OR/ 1 tin of brown lentils (drained)
Tomato sauce
herbs, pepper.
1 med onion (finely chopped)
1/2 cup of frozen peas
1/2 cup carrott (finely diced)
4 medium sized brown or white mushrooms (finely chopped)
2 large potatoes.

Fire proof Caserole dish about 6 inches wide and 2 inches or so deep.

Method.

Peel and cut poatoes and put on to boil. (for 30 minutes)

Steam or boil the peas and carrots until almost soft. (I used the microwave for 5 mins)
Prepare onion and mushrooms, herbs and pepper (to taste) and saute in a splash of olive oil in small pan, when onion's glassy and mushroom soft add packet of the "*Tofurky mince" or lentils and stir until warmed through.

Combined the mince (or lentils)/mushroom/onion, the cooked peas and carrots and enough tomato sauce to make a wet dish (about 1/4 of a cup sauce) and put in a small oven proof casserole dish and set to one side.

When potatoes are soft, add a splash of oat milk and non-dairy margarine and mash thoroughly.

Spread mashed potaoes on top of the mince in the casserole to thickness of about 2.5 cms. Fork through the top to create a hatch effect.

You can save this in the fridge for later, when ready to serve put in an oven at 180 C - for 20 -30 minutes, if the potoe top is browned already by 20 mins put alfoil on top for the final 10 minutes.

Serve with crusty bread!

*Tofurky is availble at many supermarkets around Oz now in the same refrigerated section usually as the sliced meats and dairy cabinet. It is about $7 a packet - Lentils on the other hand are around $1.50 to $2 a tin. So much more economical.

Thanks for the recipe @MoonGal! There's a few veggie and plant-based foodies here too. I'm one of them, and I think @Crazy_Bug_Lady hmmm who else?? I know there's a few but can't remember.

I love cooking up something new on the weekends, and am also in need of a good recipe. Will def try this one.
